VINIFICATION: This wine is produced from our old vine Chenin Blanc growing against the slopes of Simonsberg. A true exhibition of the beautiful fruit flavors this varietal and our terroir can deliver. Grapes are picked early morning and processed cold to ensure preservation of the stunning fruit aromas we continue to receive from this varietal that made itself well at home in South Africa over the years.
NOTES OF WINEMAKER: Attractive and expressive on nose and palate with lime, pineapple and gooseberry. Well balanced with an integrated acid, good structure, palate depth and texture. Lingering aftertaste with citric freshness. Fermentation took place in a combination of concrete eggs, stainless steel tanks, oak Foudre, and 500L French oak barrels with 40% of these being first fill barrels. The individual components were kept separate and underwent regular battonage (lees stirring). Blending was done after a minimum of 10 months’ maturation, after which it is kept in bottle for a minimum of 6 months before release.
